| Hearty Irish Stew |
3 pounds beef stew meat
5 cups peeled & chopped potatoes (about 4 large potatoes)
2 - 14.5 oz. cans stewed tomatoes
4 garlic cloves, minced
1 large onion, chopped
1 teaspoon salt
1 teaspoon black pepper |
| In a large dutch oven or pot, place the stew meat & add enough water to cover the top of the meat. Bring to a boil over medium high heat, then add the next 4 ingredients, reduce heat to medium low and simmer for 2 1/2 hours. Before serving, stir in the salt & pepper. Serves 8 to 10 |
