| Irish Skillet Supper |
2 Tablespoons of vegetable oil
1 package shredded hash brown, thawed
2 slices of uncooked bacon, cut into small pieces
1 pound lean ground beef
1/2 cup chopped onion
4 cups chopped cabbage
1 cup beef broth
1/4 cup apple juice or water
1 teaspoon salt |
| In a large nonstick skillet heat oil over medium high heat, add potatoes & cook according to package. Meanwhile, in antoher skillet, cook bacon pieces, ground beef and onions until meats are browned. Drain grease - add cabbage, beef broth, apple juice & salt to the meat mixture. Reduce heat to low, cover & cook until cabbage is tender, then stir in the cooked hash browns & stir to combine. Serves 6 |
